01 - 1 pound ground beef
02 - 1 small onion, finely chopped
03 - 2 cloves garlic, minced
04 - 1 cup barbecue sauce
05 - 1 teaspoon smoked paprika
06 - Salt and pepper to taste

→ Nachos

07 - 10 ounces sturdy tortilla chips
08 - 2 cups shredded cheddar cheese
09 - 1 cup shredded Monterey Jack cheese

→ Toppings

10 - 1/2 cup sour cream
11 - 1/3 cup sliced pickled jalapeños
12 - 1/2 cup diced red onion
13 - 1/2 cup diced tomatoes
14 - 1/4 cup chopped fresh cilantro
15 - 1 avocado, diced (optional)

# How To Make:

01 - Set oven to 400 degrees Fahrenheit
02 - Heat large skillet over medium heat. Add ground beef and chopped onion, cooking 6 to 8 minutes until beef is browned and onion is softened. Drain excess fat if necessary
03 - Stir in minced garlic, smoked paprika, salt, and pepper; cook 1 minute. Add barbecue sauce and simmer 3 to 4 minutes until mixture slightly thickens
04 - Spread tortilla chips evenly across large baking sheet or ovenproof platter
05 - Distribute barbecue beef mixture evenly over chips. Sprinkle cheddar and Monterey Jack cheeses uniformly across surface
06 - Place in preheated oven 8 to 10 minutes until cheese is melted and bubbly
07 - Remove from oven and immediately top with sour cream, pickled jalapeños, diced red onion, tomatoes, cilantro, and avocado if desired
08 - Transfer to serving platter and serve immediately while cheese remains warm

# Top Tips:

01 -
  • It comes together faster than ordering takeout and tastes twice as good.
  • The smoky beef soaks into the chips just enough without making them soggy.
  • You can load them up or keep them simple depending on what's in your fridge.
  • They disappear in minutes every single time I serve them.
02 -
  • Use thick restaurant style chips or the whole thing will turn into mush halfway through.
  • Don't skip draining the beef or you'll end up with a greasy puddle under your nachos.
  • Add the fresh toppings after baking or they'll wilt and lose their crunch.
  • If you're doubling the recipe, use two pans so the chips crisp evenly.
03 -
  • Layer half the chips, half the beef, half the cheese, then repeat so every level gets coverage.
  • Toast your chips in the oven for two minutes before loading them to make them extra crispy.
  • Drizzle a little extra barbecue sauce over the top right before serving for a glossy finish.
  • Use a cast iron skillet instead of a baking sheet if you want to serve them straight from the pan.
