16 - 1 tablespoon molasses
17 - 1 tablespoon Dijon mustard

# How To Make:

01 - Heat olive oil in a medium saucepan over medium heat. Add chopped onion and sauté for 3–4 minutes until softened. Add garlic and cook for 1 minute more.
02 - Add guava paste, water, and apple cider vinegar. Stir until guava paste begins to dissolve.
03 - Add smoked paprika, cumin, black pepper, chili powder, allspice, cinnamon, salt, and red pepper flakes. Stir well to incorporate.
04 - Add brown sugar, molasses, Dijon mustard, and soy sauce. Mix thoroughly until combined.
05 - Bring the mixture to a gentle simmer, stirring often. Reduce heat to low and cook uncovered for 15–20 minutes, stirring occasionally, until thickened and glossy.
06 - Remove from heat. Let cool slightly, then blend the sauce with an immersion blender or transfer to a blender until smooth.
07 - Taste and adjust seasoning if needed. Let cool completely. Store in a clean jar in the refrigerator for up to 2 weeks.

# Top Tips:

01 -
  • The guava creates this incredible fruity depth that you just cannot get from tomato based sauces
  • It comes together in under 30 minutes but tastes like it simmered all day
  • Perfect for people who want BBQ sauce without ketchup as the foundation
02 -
  • The sauce will thicken considerably as it cools so do not overreduce it in the cooking phase
  • Blending hot sauce can be dangerous, always let it cool slightly before putting it in a standard blender
  • This sauce caramelizes faster than tomato based BBQ sauces so watch it carefully on the grill
03 -
  • If you cannot find guava paste, guava jelly works but reduce the brown sugar by half since jelly is already quite sweet
  • For a smoother sauce without blending, grate the guava paste before adding it to the pot
