# How To Make:

01 - Butter an 8x8-inch square baking pan and line with parchment paper, leaving overhang on opposite sides for easy removal.
02 - Combine chopped guava and water in a saucepan. Simmer over medium heat for 15 minutes until fruit is completely soft and tender.
03 - Transfer cooked guava to a blender or food processor and blend until completely smooth. Press through a fine mesh sieve to remove any remaining seeds or fibers, extracting maximum pulp.
04 - Measure exactly 2 cups of the sieved guava puree. Return to a heavy-bottomed saucepan for the cooking stage.
05 - Add granulated sugar and fresh lime juice to the guava puree. Cook over medium heat, stirring constantly with a wooden spoon or heatproof spatula to prevent scorching.
06 - Continue cooking for 30 to 40 minutes until mixture noticeably thickens and begins to pull away from the sides of the pan. The mixture should form a cohesive mass that holds its shape.
07 - Add unsalted butter to the thickened mixture. Stir continuously until fully incorporated and the mixture becomes glossy and very thick.
08 - Immediately pour the hot guava mixture into the prepared baking pan. Smooth the top surface with a spatula for an even layer.
09 - Allow the guava cheese to cool completely at room temperature for approximately 1 hour until firm and set.
10 - Lift the set block from the pan using the parchment overhang. Cut into 1-inch squares or diamonds using a knife greased with butter. If desired, roll individual pieces in superfine sugar for a decorative coating.
