Tender, fluffy pancakes blended with creamy cottage cheese for a light, wholesome start to your day.

# What You’ll Need:

→ Dairy

01 - 1 cup cottage cheese (full-fat or low-fat)
02 - 1/4 cup milk

→ Dry Ingredients

03 - 3/4 cup all-purpose flour
04 - 1 tablespoon sugar
05 - 1/2 teaspoon baking powder
06 - 1/4 teaspoon salt

→ Eggs

07 - 3 large eggs

→ Flavorings

08 - 1 teaspoon vanilla extract

→ For Cooking

09 - 2 tablespoons unsalted butter or neutral oil, for frying

# How To Make:

01 - In a large bowl, whisk together cottage cheese, eggs, milk, and vanilla extract until mostly smooth with some curds remaining.
02 - In a separate bowl, sift together flour, sugar, baking powder, and salt.
03 - Add dry ingredients to the wet mixture and stir gently until just combined, ensuring the batter remains thick without overmixing.
04 - Preheat a nonstick skillet or griddle over medium heat and add a small amount of butter or oil.
05 - Scoop approximately 1/4 cup batter per pancake onto the skillet, spreading slightly if needed. Cook 2–3 minutes until bubbles form and edges set, then flip and cook 1–2 minutes until golden and cooked through.
06 - Continue with remaining batter, adding more butter or oil as necessary. Serve warm with fresh fruit, honey, maple syrup, or preferred toppings.

# Top Tips:

01 -
  • The cottage cheese makes these pancakes so soft and tender that butter melts into them without any effort on your fork.
  • They're genuinely full of protein, so you actually stay full instead of hunting for a snack two hours later.
  • The whole thing comes together in the time it takes to heat your griddle, making weekday mornings less of a rushed scramble.
02 -
  • Do not overmix the batter—the temptation is real, but lumps are your friend and lead to tender pancakes instead of rubbery ones.
  • If your cottage cheese is very lumpy, blend it briefly with the eggs and milk before adding the dry ingredients for a smoother batter that cooks more evenly.
03 -
  • If you want extra protein, high-protein cottage cheese works the same way and doesn't change the texture or flavor noticeably.
  • Medium heat is non-negotiable—too high and your outsides brown before the insides cook, too low and you end up with pale, tough pancakes.
